Roasted potatoes are one of the most delicious ways to prepare these funny looking little spuds. Sometimes it takes too long, or maybe you don’t want to turn on your oven
If that’s the case, then try these tasty Air Fryer baby potatoes. They are so easy to make, and you won’t have to wait for the oven to warm up, or heat up your kitchen for one side dish.
WHAT SIZE POTATOES WORKS BEST FOR AIR FRYING?
You can air fry any size potato. The bigger they are, the longer they will take to cook all the way through.
For this recipe the baby or miniature potatoes work best. You can often fine them in the grocery store in mesh bags. There’s about 1 pound or so in a bag.

1 lb Baby Potatoes
2-3 Tbsp Olive Oil
1/2 tsp Salt
1/4 tsp Pepper
1 1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/2 tsp Paprika (optionally, use smoked for extra flavor)
1/2 tsp Dried Basil Leaves (or Italian seasoning)
1/2 cup Grated Parmesan, divided
2 Tbsp Chopped Parsley (for garnish)
Rinse the potatoes and pat dry with a paper towel. Be sure to dry thoroughly. Set aside.
Mix the olive oil and the seasonings in a bowl.
Add 1/4 cup of the parmesan and mix in.
Add the potatoes to the bowl and stir the potatoes to coat them with the mixture.
Add to the air fryer basket, spreading out so they don’t touch. That way they will get crisp and not steamed.
Set the temperature to 400° and cook for 15 minutes, tossing/stirring the potatoes halfway through the cook time.
Test the potatoes with a toothpick or small knife to see if they are tender enough for you. If not, just close the lid and cook for a few more minutes.
Remove to a serving dish and sprinkle the hot potatoes with the remaining parmesan and some chopped parsley.
